Four days is all you need to fall properly for the south. Galle Fort — a UNESCO World Heritage city of Dutch ramparts, boutique galleries and excellent tables — anchors the trip. The surrounding coast is a quieter, less-developed alternative to the crowded southwest: empty bays at Talpe, the slow lagoon at Koggala, and a cookery class in a Fort kitchen that will ruin restaurant Sri Lankan food for you permanently.
